Chapter 3

"Your blade is too thick for the squab, Elara."

Chef Henri's gravelly voice broke the absolute silence of the Parisian tasting kitchen. He stood beside the massive marble island, arms folded across his immaculate white coat.

I kept slicing. "The weight does the work. It fractures the joint exactly where I need the marrow exposed."

"You risk tearing the skin."

"Not with this edge." I wiped the carbon-steel blade of the antique santoku knife he had laid out for me. The wooden handle, worn smooth by decades of friction, fit my palm effortlessly. "Watch."

I brought the blade down. A clean, sharp crack echoed off the subway-tile walls. The bird split perfectly in two, the delicate skin intact, the bone severed cleanly.

Henri raised a gray eyebrow but said nothing.

I turned my attention to the dry cast-iron skillet smoking on the induction burner. I tossed in three thick knobs of ginger. They hissed, the skin blistering instantly.

"You ruin the aromatics," Henri observed, moving a step closer. "Too much heat."

"Charred, Chef. Not ruined." I flipped the blackened roots with a pair of steel tongs. "My grandmother insisted on the ash. The carbon acts as a filter for the impurities in the fat."

"A peasant trick."

"A survival tactic," I corrected, lowering the heat. "And it yields a clarity your fine-mesh sieves never could. You invited me here to taste my food, Henri. Let me cook it my way."

"Confidence," Henri murmured, tapping a finger against his forearm. "You lacked that three years ago when you turned down my apprenticeship for a boy with a lease."

I tightened my grip on the tongs. "I made a poor investment. I am correcting it."

"We will see."

For the next two hours, the massive kitchen belonged entirely to me. Henri hovered at the edges, a silent judge tracking my every pivot and pour. He watched me fold the delicate squab meat into translucent wrappers. He scrutinized the way I skimmed the golden fat from the simmering broth, a recipe born in my family's cramped kitchen, now boiling in the culinary capital of the world.

"You use too much wrist," Henri criticized as I moved to the herbs.

"I use exactly enough," I shot back, chopping the scallions into microscopic rings. "Julian used to tell me I was too slow. I told him perfection doesn't watch the clock."

"Julian is a businessman. Businessmen count pennies. Chefs count seconds."

I swept the scallions into a small ceramic bowl. "He counted my money well enough."

"And yet, you are here. Cooking in my kitchen. Using my grandmother's knife to make your grandmother's dish."

"It's not just a dish. It's a legacy."

"Prove it."

The antique knives felt like extensions of my fingers. Every slice, every dice, every julienne was an argument I was winning. I didn't need Julian's money. I didn't need Brielle's followers. I had my hands.

"Plate it," Henri commanded.

I arranged the delicate dumplings in the center of a shallow porcelain bowl. Grabbing a silver ladle, I poured the amber broth over the top. The liquid was perfectly clear, catching the harsh overhead lights like liquid glass. The rich scent of roasted marrow and toasted star anise rose between us.

I slid the bowl across the stainless-steel pass.

Henri picked up a silver tasting spoon. He dipped it into the broth, bringing it to his lips.

He swallowed.

He didn't speak. He lowered the spoon back into the bowl. The metal clinked softly against the porcelain. His jaw flexed, his eyes dropping to the golden liquid as if trying to decipher a hidden code written in the fat.

"Twelve hours?" he asked, his voice entirely stripped of its usual gruffness.

"Yes."

"And the star anise?"

"Toasted dry for forty seconds, then submerged."

Henri picked up the spoon again. He tasted the broth a second time, closing his eyes. The lines around his mouth softened. He took a third bite, this time capturing one of the delicate squab dumplings. He chewed slowly, analyzing the texture, the resistance of the wrapper, the burst of rich, savory liquid trapped inside.

When he finally looked up, the stern, impenetrable wall of the Michelin legend had cracked.

"Julian Thorne threw this away," Henri stated flatly.

"He preferred a woman who burns toast but has three million followers," I replied, wiping my hands on a clean side towel. "He told me I was a liability in the front of the house. He said people want to eat food made by a star, not a ghost."

Henri scoffed, a harsh, scraping sound in the back of his throat. "A fool. He traded a diamond for a piece of polished glass."

"He kept the restaurant. He kept the menu."

"A menu is ink on paper, Elara." Henri gestured to the empty bowl. "This is a fingerprint. A fraud can wear your jacket, but she cannot replicate your soul on a plate. She does not know the heat required to blister the ginger. She does not know the weight of the knife."

"She doesn't have to," I said, leaning against the counter. "Julian hired a dozen prep cooks to follow my master sheet."

"And you left them the true recipe?"

"I left them a trap," I admitted, a cold smile touching my lips. "I altered the ratios. The broth will turn bitter within four hours. The critics will taste ash."

Henri let out a sharp, booming laugh. It echoed through the kitchen, startling a young sous-chef walking past the glass doors outside.

"Brilliant," Henri said, wiping a tear from his eye. "You have teeth, Elara. I always wondered if you did."

He reached into the breast pocket of his chef's coat.

His fingers emerged holding a small, heavy object. He placed it flat on the metal counter and pushed it toward me.

The silver badge gleamed under the fluorescent lights. It bore no name, only a serial number and the iconic embossed star of the world's most feared culinary guide.

I stared at the metal. "What is this?"

"The industry relies on truth," Henri said. "The guide requires palates that cannot be bought, fooled, or seduced by a pretty face on a screen. We need inspectors who understand the brutal reality of a kitchen. Who know the difference between hype and art."

I ran my thumb over the raised edges of the star. "You want me to be an anonymous reviewer."

"I want you to be a judge," Henri corrected. "You possess a rare gift. Your palate is flawless, and your technique is forged in fire. The woman who stole your kitchen is a pretender. Pretenders destroy the integrity of our craft."

"Julian threatened to blacklist me," I reminded him. "He said I would never work in this industry again."

"Julian Thorne controls a single city," Henri dismissed with a wave of his hand. "I operate across the globe. You work for me now. You will travel. You will dine. You will hold the fate of empires in your hands. A single word from you can crown a king or ruin a dynasty."

I picked up the silver badge. The metal felt cold, heavy with a power I had never possessed. For three years, I had begged Julian for a fraction of the respect I had earned. I had bled over cutting boards and scrubbed grease from floor tiles just to be shoved out the back door.

Now, the most powerful man in the culinary world was handing me the executioner's axe.

I unbuttoned the front of my tailored black blazer. I pinned the silver star to the inside lining, right over my heart, and smoothed the fabric back into place. Completely hidden. Completely lethal.

"I accept," I said.

Henri offered a sharp, approving nod. He turned to the counter behind him and picked up a thick manila folder.

He dropped the file onto the prep station right next to my empty bowl.

"Welcome aboard," Henri said, tapping the cardboard cover. "Six months from now, your first three-star inspection target is Julian's restaurant."
